Home Made Spinach Pancetta And Riccota Cannelloni

Serves 4



– 250g Strong flour

– 1 large egg

– 2 egg yolks

– 2tsp olive oil

– 1/2tsp salt

– 1tbsp water


– 300g ricotta

– 200g pancetta diced finely

– 150g baby spinach shredded lightly cooked in water and squeezed dry.

– salt and pepper to taste.

Salsa di Pomodori (tomato sauce)

– 25g fresh basil

– tbsp dried basil

– tbsp tomato puree

– 500ml weak veg stock

– 1 tin of chopped plum tomatoes

– 1 jar sun blushed tomatoes in brine (super markets will do them)

– 1/2 white onion finely sliced

– 1 clove garlic finely chopped

– 25ml olive oil

– tsp sugar

– salt & pepper to taste

 Besciamella (white sauce)

– 40g butter

– 40g plain flour

– 600ml milk

– salt and pepper to taste

– pinch of grated nutmeg

50g Parmesan for topping the dish



To make the pasta you will need to either make it by hand or in a mixer, the latter being the fastest. Basically for the latter place all pasta ingredients into mix and blitz for around 3Min’s until a coarse breadcrumb effect is achieved tip onto lightly floured surface and work it together with your hands bringing all the mix into one ball. Knead the pasta until it becomes smooth and elastic. Usually around 6Min’s

To do this by hand pour flour onto work surface with the sugar make a well in the centre pour the eggs into the centre with water and oil. bring the flour around it into the liquid mixture and slowly work all the flour into the mixture until a ball is achieved and no flour remains. work this pasta by kneading it for 5-8 Min’s until elastic and smooth.

Either way you do it the same desired result is achieved. Personally if i had the time i would do the latter for more authenticity. Wrap the pasta in clingfilm and refrigerate for 1hr.

Meanwhile you will need to make a start on the tomato sauce, roughly chop your onion, and gently fry in a tsp of olive oil. and finely chopped garlic. Cook for around 5mins on a low heat stirring frequently.

Add your stock tomatoes, puree, herbs and sunblushed tomatoes. Bring to the boil and add sugar.

Continue to simmer on a medium heat for an hour. Make sure before taking off the heat the volume has reduced by 2/3.

Fry Pancetta in a pan until it is crisp, mix in with ricotta and spinach lightly season and refrigerate for 30mins

To make the white sauce melt butter in a saucepan and add flour. Cook on a low heat for 2 minutes, stirring frequently.

Add milk small amounts at a time stirring to ensure no lumps remain. Gradually and larger amounts of milk continue to stir and bring to the boil. Add nutmeg and seasoning.

Once the pasta has been refrigerated place on lightly floured surface and knead for two minutes. Divide in two equal size pieces.

Roll out into a 1mm thick large rectangle, if you are using a rolling pin it will take a while.

Cut into 3″ x 5″ rectangles fill the centre of each rectangle with the riccota mixture. Do not overfill cannelloni. Lighlty brush the edges with water and roll the rectangles up so to incase the mixture. Do not apply to much pressure or the mixture maybe forced out the ends. You should be able to get 12 tubes out of the pasta recipe.

Once both lots of pasta have been filled place a small amount of tomato sauce in the base of four small, oval earthenware or oven proof dishes. Divide cannelloni between dishes and top with remainder of the tomato sauce.

Top this with the white sauce and then sprinkle generously with parmesan and bake for 35mins on 190*c

“Food, Inc” and Voting With Our Meals

Have you seen “Food, Inc.”? It’s the new documentary about our industrialized food system and its effect on our environment, economy and workers’ rights. Michael Pollan is interviewed in the movie, which offers a good summary of his book Omnivore’s Dilemma. Even having read that and other similar books, I was glad I saw the movie and found it motivating.

My favorite line from “Food, Inc.” is the reminder that we vote three meals a day. This movie wakes us up from the complacency that the way we eat is okay. I’ve said it here before: the way we eat is making us sick. Our industrial food practices come at a cost and “Food, Inc.” takes an unflinching look at those costs.

Commodity corn and soy are subsidized by the government. This does two things: it keeps the prices artificially low and it forces the farmers growing them to maximize yield. These practices generate a huge surplus, which provides cheap feed for animals and cheap ingredients for processed foods. This contributes to the disturbing fact that junk food tends to be cheaper than fruits and vegetables – it’s subsidized.

There are advantages to feeding surplus grains to animals: it is cheap and it creates fast growth. It also provides huge quantities of meat for a protein-loving culture, but to look at the true costs we need to look at its impact on animals, environment and our health.

Cows and pigs raised on factory farms are packed into a limited space where there is no easy way to dispose of their ankle-deep manure. They need antibiotics to survive their diet and confinement – causing resistant strains of bacteria to develop. Their meat contains more fat and more omega-6 fats (more about these next month) – increasing our risk for heart disease, diabetes and obesity.

Chickens used to reach full size in 70 days; now they are double that size in just 48 days. Their organs and bones can’t sustain the weight. Not only do we feed surplus corn to cows and chickens, but we even feed corn to fish – including farmed tilapia and salmon.

Back to the idea of voting with our meals. There is a great story in the movie about Walmart, who in March of 2008, announced that their milk would only be sourced from cows not treated with artificial growth hormones, such as recombinant bovine somatotropin (rbST). This was not altruistic; they did it because their shoppers demanded it. The story shows how powerful our shopping dollars are: we really can create change by asking for what we want. What we buy is what our grocers stock.

I have a challenge for you: eat less meat (including poultry and fish). Have one or two meat-free days a week. We have to be willing to pay the farmers the true cost of food that is healthy (for us, animals and the planet!) We can’t raise enough meat sustainably to meet our current demand, but we can if we eat a little less. As a bonus, if we eat less, then the extra expense doesn’t matter so much.

For example, I buy grass fed beef, organic chicken and wild salmon. All are significantly more expensive – but I don’t eat them daily. Even if I pay double for grass fed hamburger, I can cut the cost in half by eating beans and rice the next night (which is healthy and I love). So I end up paying the same amount overall, eating healthy, supporting the farmers and markets who offer these choices; and it all supports sustainable agriculture.

What continually amazes and delights me is that what is healthy for us is also what is good for the planet. We don’t have to sacrifice our health for sustainable practices, and even the added cost can be managed. This weekend I’m headed to a Slow Foods 100-mile dinner, celebrating our local food culture and farmers. We are lucky to live in an area that gives us a wealth of healthy choices. VP Dick Cheney’s Sexiest Speech Ever Endearing Obama & Hillary At Radio & TV Correspondents Dinner

The annual Radio & TV correspondents dinner on April 16th 2008 was an unusual and unforgettable display of personality for Vice President Dick Cheney.

The gala was a grand event attended by over 2,000 government officials, power players throughout the media, politicians, and celebrities.

Most memorable however were V.P. Dick Cheney’s remarks, which I provide an excerpt of below for your comic relief.

V.P. Dick Cheney: “As the President said in his video message, he is hosting a dinner in the honor of Pope Benedict. And I myself met with his holiness this morning at the White House. So between that and this dinner with the media, it’s been quite a day for me. I spent the morning with one infallible authority and now I get to spend the evening with one thousand of them.”

Cheney joked a bit about global warming reminding us that it would indeed be getting warmer considering it’s spring time.

Cheney mentioned the President himself complimenting as benig “the funniest guy he knows.” Cheney took that as a compliment, but tried to keep it in perspective considering it comes from the same fella who thinks that 9’oclock is late, who believes ginger ale is a night cap, and who thinks paradise is 40 miles west of Waco.

Cheney remarked candidly: “…Even my wife seems to think my image needs polishing. At breakfast today I asked Lynn if deep down it bugs her that people have taken to calling me Darth Vader? She said, ‘Not at all. It humanizes you.'”

The last time Lynn Cheney went on The Daily Show with Jon Stewart she brought a toy sized Darth Vader and gave it to him during the show. It was a fun moment. Following the show Lynn jetted rather quickly to get out of there. The next night, Jon said she had gone to bring him back a pie. Yeah right! To throw in his face perhaps. LOL

Speaking of Mo Rocca, Cheney said among his other credits Mo used to host a TV show called ‘Things I Hate About You’ which Dick likened to ‘Countdown with Keith Olberman.’

Best of all was Cheney’s remarks about the campaign which he expressed to be watching with interest and really wanting John McCain to win. Cheney said he is proud to support John even though one of the Democrats running is a relative of his. He’s Senator Obama to you, but he’s cousin Barak to big Dick. Amazingly enough it turns out that Barak is also related to Brad Pitt. That means Dick Cheney and Brad Pitt are related, which explains what Angelina sees in that guy. In any case Cheney told the Radio & TV correspondents “You’re looking at somebody who is just a couple of degrees of separation from the sexiest man alive.”

Cheney said of cousin Obama: “Barak Obama and I have had our disagreements and frankly, I do wish he’d keep these things in the family. For example I keep telling him it’s time to start thinking about a choice for Vice President. He says he’ll find a running mate just as soon as he’s got himself a new Pastor.”

All laughed and enjoyed Cheney’s remarks about cousin Barak sitting through some mighty riveting sermons over the years. Cheney added that if he gets elected you’re not going to want to miss those Washington prayer breakfasts.

In closing Cheney mentioned the two Democrats running for President and the fact they’re still hopelessly divided over whose the real uniter. Dick exhorted the press to go easy on Senator Clinton on the whole business on running and ducking from gunfire in Bosnia. Cheney said Hillary made an honest mistake. She confused the Bosnia trip with the time he took her hunting.

It’s too bad Cheney has come out of the closet as a jokester so late in his political career. Maybe secretly behind close doors he really is like Dubya says a pretty likeable and funny guy. I guess however when you’re approving “enhanced interrogation” techniques and feeling guilty about it, you kind of have to keep your mouth shut to protect the administration. Nevertheless we all could use some more comic relief right about now. Keep it coming Mr. Vice President, we’re starting to like you.

ps. Can I go fishing with you? You seem to really have an eye for hot chicks and definitely have the bank account with your Halliburton holdings to show them a good time. Where did you get those sunglasses anyway?
